Hey there,
I am Lauren Windsor, a clinical nutritionist with a Bachelor degree of Health and Science (BHSc) in Nutritional and Dietetic Medicine. Thanks for taking the time to get to know me a bit more.
For as long as I can remember my happy place is in the kitchen. From a small child I loved helping mum with baking, which progressed into cooking for the family during my teens, until I finally ended up in a professional kitchen in my 20’s whilst living in Europe. It was during this time that my healthy journey began. A small malignant melanoma had been found on my arm and spread to my lymph nodes. After a few stays in the hospital and full right auxiliary clearance (removal of lymph nodes in my arm pit), I was considered cancer free.
During my stay in the hospital I was shocked at the poor quality of food offered to patients, sparking my interest to a dedicated passion in healthy food and nutrition. Working as a whole-food chef I needed to learn more and entered into a Bachelor of Science Degree in nutritional medicine. Now as a qualified clinical nutritionist and a single mum, I know like no other parent how it is to juggle life’s demands.

From studying, working and raising a kid solo, there isn’t always much time left over for self-care. Although with a love for cooking and all things healthy food, a laid back spirit and making time to exercise and be in nature, I’m happy to say that most of the time I’ve found a balance of self-care that works for me. And let’s be honest, that balance does go a bit out of whack from time to time.
There are days when I have one too many wines, skip gym because I just can’t be bothered going, choose the oh so oozy melted cheese thingy on the menu, and stay up way too late watching series. I think that balance comes from being kind to ourselves. Tomorrow is a new day and I’ll just make sure that my plate is jam packed full of glorious greens!
