Banana Pancakes
INGREDIENTS
Dry
½ cup Green banana flour
1 tsp Baking powder
1 tsp Cinnamon
Pinch of Sea salt
Wet
2 Eggs
2 ripe Bananas (mashed well)
¼ cup Milk (plant based or milk of choice)
1 tsp Vanilla extract
Coconut oil or butter for frying
Toppings: choose from any of the following
fresh berries
chia seeds
coconut flakes
crushed walnuts or other nuts or seeds
nut butter
drizzle of maple syrup or honey
Mash the bananas and add all the other wet ingredients in a bowl. Mix all the dry ingredients in another bowl. Add dry ingredients to the wet and mix. Warm some oil or butter up in a frying pan, add 1/3 cup of mixture to the pan. If the pan is larger you can cook about 3 at a time. The key is to have the flame at a medium heat, if it’s too high the pancakes will burn (because of the sugar in the bananas). You’ll start to see some holes on the top of the pancakes, that means it’s time to flip them. Be gentle with flipping, these aren’t the type of pancakes that you can flip with the pan. The second side cooks pretty quick so keep an eye on them. Serve with your favourite combination of toppings
